Italian cuisine has always been one of my greatest sources of inspiration, with a particular affinity for Neapolitan and Southern Italian cooking. Cucina povera, or “poor cuisine,” is all about making do with what you have. Here, we reject the notion of a single “authentic” recipe for Italian dishes. Instead, we reinterpret them endlessly—with what we have, with our inspirations, and with our hearts.
