The cupcakes I made yesterday at Nutmeg 🥰🥰 with an apple crumble twist!

I would really like to take the time to create a complete vegan pastry course. Because I share some simple tips here and there, but I would like to gather all the basics of my profession into one comprehensive tool (my whipped creams, custards, cake bases, cookies, meringues...). Of course, I don't have the time to work on this right now, but it's a long-term project 🥰 In the meantime, here's the recipe for these cupcakes!

For the whipped cream: you can use my classic recipe or my princess cream. For the crumble, I have several recipes available on the blog, otherwise you can crush some cookies :)

  • -all-purpose flour 220 (g)
  • -sugar 110 (g)
  • -baking soda 1 (tsp)
  • -baking powder 1 (tsp)
  • -salt 1 (pinch)
  • -neutral oil 30 (mL)
  • -apple cider vinegar 20 (mL)
  • -soy milk 210 (mL)
  • -apples 1
Caramelized apples
  • -sugar 1 (tsp)
  • -cinnamon
  • -apples 1

  • Preheat your oven to 355°F (180°C). Mix the dry ingredients together.
  • Mix the soy milk with the oil and vinegar. Pour this mixture over the dry ingredients and whisk.
  • Pour into 6 muffin molds.
  • Peel and dice the apple into small pieces. Add the pieces directly into each muffin mold and lightly mix them into the batter. Bake for 20 minutes.
  • Prepare the caramelized apples: peel and dice the apple into small pieces. Cook it in a saucepan with a little water to make a compote. Toward the end of cooking, add some sugar or maple syrup to caramelize the apples and a pinch of cinnamon.
  • Once the cupcakes are baked and cooled, decorate with whipped cream, caramelized apples, and crumble (I used a broken biscuit tart base that I accidentally broke while removing it from the mold, but you can also use crumbled biscuits).
