Vegan strawberry and white chocolate cookies

Soft on the inside, slightly crispy on the outside, and just fruity enough… basically, the kind of recipe you’ll want to make all through May. I made these big, indulgent cookies with strawberries, white chocolate, and dark chocolate to serve for a little coffee get-together at my place — and they were incredible. It’s my go-to base recipe for cookie dough, always!

  • -plant-based margarine 205 (g)
  • -sugar 100 (g)
  • -light brown sugar 100 (g)
  • -soy milk 50 (mL)
  • -baking soda 0.5 (tsp)
  • -salt 1 (pinch)
  • -all-purpose flour 300 (g)
  • -Freeze-dried strawberries 20 (g)
  • -dark chocolate 80 (g)
  • -Strawberry jam 2 (tbsp)

  • Mix the margarine, brown sugar, and granulated sugar together until you get a creamy texture.
  • Add the soy milk and baking soda. Mix well. Then add the flour and mix again until you get a dough.
  • Fold in the dark chocolate chips, white chocolate chunks, lightly crushed freeze-dried strawberries, and the jam. Mix roughly to combine.
  • Using an ice cream scoop, form dough balls and place them on a baking sheet lined with parchment paper.
  • Bake for 20 minutes at 180°C (355°F).
