Collect the lemon peels and roughly chop them. Put them in a pan with some water and bring it to a boil. Drain them and discard the water. This helps to remove the bitterness. You can even repeat this procedure several times.
Put the lemon peels back in the pan with 500 mL of water and sugar. Let it boil for 5 minutes then turn off the heat. Add the lavender, or the rosemary, or the mint and let it steep for 15 minutes with a lid. Drain and then let it cool.
Mix the infused water, lemon juice, and a liter of still or sparkling water in a glass bottle.
