  • Squeeze the lemons to keep the juice aside.
  • Collect the lemon peels and roughly chop them. Put them in a pan with some water and bring it to a boil. Drain them and discard the water. This helps to remove the bitterness. You can even repeat this procedure several times.
  • Put the lemon peels back in the pan with 500 mL of water and sugar. Let it boil for 5 minutes then turn off the heat. Add the lavender, or the rosemary, or the mint and let it steep for 15 minutes with a lid. Drain and then let it cool.
  • Mix the infused water, lemon juice, and a liter of still or sparkling water in a glass bottle.
