A squash gnocchi gratin to comfort you 🧡 You'll see, it's quite simple. It takes 5 minutes to prepare, and then it's just baking time, so you can do other things while dinner is cooking 😍✨

I made this with store-bought gnocchis. I also have a homemade gnocchi recipe in my book that requires a bit more patience if you're interested!

  • -gnocchi 300 (g)
  • -butternut squash 200 (g)
  • -soy cream 250 (mL)
  • -soy milk 250 (mL)
  • -salt
  • -pepper
  • -Espelette pepper

  • Preheat the oven to 350°F.
  • In a small saucepan, bring the soy cream and soy milk to a boil with salt, pepper, and Espelette chili.
  • Pour the half of this mixture into a small baking dish. Add gnocchi to cover the entire base of the dish.
  • Peel the squash and cut thin slices. Arrange these slices over the gnocchi in the dish and pour the second half of the soy cream mixture.
  • Sprinkle with vegan cheese, or gomashio, or nutritional yeast. Bake for 45 minutes! And it's ready :)

NotesOf course, as usual, you can replace the soy milk with another plant-based milk that you like :)
