One-Pot Gnocchi and White Bean Bake with Peppers

Someone asked me to bring back the budget-friendly, quick, super tasty one-pot meals — the kind that help you actually eat your legumes 🥹 And honestly, I love making these kinds of easy, everyday recipes. This time, it’s a base of gnocchi with white beans, baked in the oven in a roasted pepper sauce!

  • -olive oil 1 (tbsp)
  • -cooked white beans 260 (g)
  • -gnocchi 500 (g)
  • -water 190 (mL)
  • -vegan grated cheese 30 (g)
The sauce
  • -marinated peppers 120 (g)
  • -cashew nuts 80 (g)
  • -water 65 (mL)
  • -salt
  • -pepper
  • -lemon juice 1 (tbsp)

  • Soak the cashews in a bowl of water for 40 minutes, or boil them for 10 minutes. You can also keep them pre-soaked in the fridge for up to 3 days if that makes things easier!
  • Peel and finely chop the onion.
  • Blend the peppers with the drained cashews, water, salt, pepper, and lemon juice.
  • Heat the oil in a pan. Sauté the onion for a few minutes until it softens and starts to brown.
  • Add the white beans, gnocchi, and water. Let it simmer over high heat for about 5 minutes.
  • Pour in the pepper sauce and stir to combine. Let it simmer for another 5 minutes, then sprinkle with vegan shredded cheese.
  • Bake on grill or broil mode for just 3 minutes to get a nice golden crust!
