This recipe is true comfort food 😍 A spaghetti squash with its wonderfully tender, stringy texture, topped with golden and creamy onions, and then baked to perfection! In my book, there's a recipe for spaghetti squash stuffed with mushrooms and cream soubise, which I love, but it's a bit more involved. So here's a quicker recipe 🥰✨ Of course, whenever you scoop out the seeds from a squash, you can keep them and roast them to add to your dishes! I like that, but in small doses, haha 😅

  • -spaghetti squash 1
  • -olive oil 3 (tbsp)
  • -onion 2
  • -shallots 4
  • -vegan grated cheese 40 (g)
  • -salt
  • -pepper

  • Preheat the oven to 355°F (180°C).
  • Cut the spaghetti squash in half and remove the seeds. Drizzle each half with a tablespoon of olive oil, add salt and pepper, and rub the flesh to season it. Place the two halves, face down, on a baking sheet lined with parchment paper. Bake for 45 minutes.
  • Peel the onions and shallots and slice them thinly. In a saucepan, heat a tablespoon of olive oil and sauté the onions and shallots until they become translucent.
  • Continue cooking for about ten minutes until they are well browned and grilled. Season with salt and pepper. Pour in the plant-based cream.
  • After removing the squash from the oven, loosen the flesh a bit from the edges to mix in the seasoning. Pour the creamy onion mixture and add some shredded vegan cheese.
  • Place in grill or broil mode for 5 minutes! It's ready, serve the squash halves directly in their skins!
