Gratin of apples, salted caramel sauce

The snack is reaaaaaaaady ;-) Apparently, it's springtime... cool, but for now, we still feel like staying under the blanket watching the rain fall. And for that, a cake is essential for these lousy March days!

We were craving something tarte tatin-like, you know? But with a cake batter, and quick to make, of course. So, we prepared an apple gratin for you, with a salted caramel sauce!

The recipe is for a small gratin dish (about 15 cm in diameter), so you might need to double the quantities if you're feeding a family of gourmands ;-)

  • -apples 3
  • -all-purpose flour 130 (g)
  • -sugar 30 (g)
  • -baking powder 1 (tsp)
  • -banana 0.5
  • -soy milk 120 (g)
  • -neutral oil 30 (g)
  • -vanilla 1 (clove)
The caramel
  • -sugar 60 (g)
  • -soy cream 80 (mL)
  • -flower of salt

  • Preheat the oven to 200°C (392°F).
  • Peel the apples and cut them into quarters. Lightly grease the bottom of your gratin dish with a little oil or margarine and arrange the quarters to fill the dish.
  • In a mixing bowl, combine the flour, 30g of sugar, and the yeast. In another container, mash the half banana, add the yogurt, soy milk, and oil. Combine these two mixtures to form your cake batter, mix with a whisk until smooth. Split the vanilla pod in half and collect the seeds to add to the batter.
  • Pour the batter into the dish, over the apples. Bake for 50 minutes.
  • In the meantime, prepare the caramel sauce: pour the 60g of sugar into a saucepan, so that there is only a thin layer at the bottom. Caramelize over high heat, without using any utensils. Slowly swirl the saucepan from time to time to mix the remaining sugar with the caramel.
  • Heat the cream in the microwave. Once all the sugar is caramelized, add the cream off the heat. You can gently reheat if all the caramel is not dissolved in the cream.
  • When the sauce is smooth, pour it into a bowl and add a pinch of sea salt. Allow it to cool. Serve your warm gratin with some caramel ;)
