Did you have a good Christmas? We hope you stuffed yourself, maybe even thanks to our recipes! But if you were hoping for a detox slimming moment after the Christmas feast, you don't know us very well ;-) Because at Éline's table, a promise is a promise! And so, as promised (on Instagram), today we offer our vegan king's cake recipe, to make sure your stomach doesn't empty out ;-)!

Edit from 2023: I just published a new version of this recipe! It's a frangipane king's cake so it's a bit longer to make than the almond cream version, but super yummy and still easy, of course.

  • -vegan puff pastry 2
  • -almond powder 200 (g)
  • -cornstarch 40 (g)
  • -sugar 80 (g)
  • -plant-based margarine 60 (g)
  • -soy cream 100 (g)
  • -soy milk 5 (mL)

  • Preheat the oven to 200°C (392°F).
  • In a mixing bowl, combine the almond powder, sugar, and cornstarch. Melt the coconut oil or margarine. Pour it over the powder mixture. Add the soy cream and whisk to blend.
  • Line your tart pan with one of the puff pastries and pour in the almond filling. Spread it evenly and place the bean. Cover with the second puff pastry and fold the edges neatly.
  • You can create designs on the top with the tip of a knife. Poke a hole in the center of the galette so that air can escape during baking and prevent a bubble from forming. Using a brush dipped in soy milk, dab the top of the galette.
  • Bake for 45 minutes, keeping an eye on it occasionally; it should be nicely golden on top. It's ready!
