Vegan Raspberry Chocolate Entremet

Apart from Yule logs, I rarely share entremet recipes like this! Even though it was my daily job for years, even in my café 🥹🥹 I always feel like no one will actually make them at home 😅 But to celebrate our 10-year anniversary with my partner and Valentine’s Day, I wanted to create a simple entremet that’s easy to make at home, featuring flavors everyone generally loves: raspberry and chocolate 😍

For an easy vegan entremet, I chose to make a soft almond sponge coated with chocolate, a raspberry compote, a raspberry mousse, and a super simple silky chocolate mousse.
