This pie is the best of autumn 😍😍 Halfway between an apple pie, a Bourdaloue, and a pumpkin pie! A nice crispy crust, a pumpkin and almond cream with spices, and apples.

For the pie crust
  • -plant-based margarine 100 (g)
  • -sugar 90 (g)
  • -soy milk 2 (tbsp)
  • -salt 1 (pinch)
  • -baking soda 0.5 (tsp)
  • -all-purpose flour 220 (g)
For the pumpkin almond cream
  • -pumpkin puree 150 (g)
  • -almond powder 180 (g)
  • -plant-based margarine 30 (g)
  • -cornstarch 40 (g)
  • -baking powder 0.5 (tsp)
  • -cinnamon 1 (tsp)
  • -4 spices blend 0.5 (tsp)
  • -apples 4

  • Preheat the oven to 180Β°C (355Β°F).
  • Prepare the pie crust: mix the margarine and sugar with a whisk to cream everything together. Add the soy milk, salt, and baking soda, then mix again. Incorporate the flour by hand to form a dough ball.
  • Roll out the dough and then place it in your 24 cm (9.5 inches) tart pan.
  • Prepare the almond cream: mix the almond powder, starch, and margarine together, then add all the other ingredients. Mix well.
  • Pour this mixture into the pie crust.
  • Peel and core the apples. Cut them into thin slices and arrange them on the tart.
  • Bake for 50 minutes. Sprinkle with powdered sugar before serving if you wish!
