Grilled Fig and Zucchini Salad

I've had this recipe in my notes for at least 2 years and never actually made it... Earlier today, I saw some gorgeous figs on sale at the grocery store and decided it was time ;) So here's my summer salad with fresh figs, grilled zucchini, arugula, a bit of sunflower seeds, lime, and olive oil.

I also added some vegan feta, which is optional for this recipe, but if you have some it will be really good with it :)

  • -figs 2
  • -zucchini 1
  • -arugula 2 (handful)
  • -lime 0.5
  • -sunflower seeds 2 (tbsp)
  • -olive oil 2 (tbsp)
  • -balsamic vinegar 1 (tbsp)
  • -salt
  • -pepper
  • -basil 5 (leaves)

  • Cut the zucchini in half and then into thin half-moon slices.
  • In a frying pan, heat 1 tablespoon of olive oil. Cook the zucchini rounds on high heat for 5-6 minutes until they are grilled on both sides. At the end of cooking, add the sunflower seeds to toast them as well. Season with salt and pepper.
  • In a large deep plate or a bowl, mix arugula with 1 tbsp of olive oil, vinegar, lime juice, and a pinch of salt.
  • Add the grilled zucchini and then the sliced figs. Finish with a few basil leaves and some vegan feta if you have any!
