Pasta risotto with sun-dried tomatoes

A while ago, I used to work in a restaurant where they served an orzotto, I didn't know it at all before and I fell in love with this dish! But what is it? you might ask! In fact, it's a pasta risotto made with pasta called orzo, thus orzotto (makes sense, right?). These pasta are shaped like grains of rice and are also called risoni or bird's beaks. So, on this website, you'll find different orzottos, but for this one, I make a risotto with macaroni ! 

For the garnish here, we have diced fresh tomatoes, sun-dried tomatoes, and basil. I don't know if you agree with me, but I find that it's never easy to know what to put in a risotto, I'm not a fan of mushrooms, asparagus, and company so it's a bit of a headache anyway. So tell me, what do you put in your risottos, my little friend?

  • -yellow onion 0.5
  • -tomatoes 1
  • -dried tomatoes 10 (pcs)
  • -olive oil 1 (tbsp)
  • -soy cream 125 (mL)
  • -salt
  • -pepper
  • -orzo 190 (g)
  • -vegetable broth 500 (mL)

  • Dice the tomato. Peel and thinly slice the onion into fine strips. Sauté them in a pan with olive oil for 3 minutes. Add the tomato, the sliced dried tomatoes and the pasta and "pearl" them with the onions for another 3 minutes.
  • Add a ladle of broth and mix. Once all the liquid is absorbed, add another ladle, and continue in this manner until the broth is finished (about 15 minutes). Taste to see if it's cooked, if not, add more water and let it cook.
  • When it's cooked, stop the heat and add the soy cream. Season with salt and pepper.
