A while ago, I used to work in a restaurant where they served an orzotto, I didn't know it at all before and I fell in love with this dish! But what is it? you might ask! In fact, it's a pasta risotto made with pasta called orzo, thus orzotto (makes sense, right?). These pasta are shaped like grains of rice and are also called risoni or bird's beaks. So, on this website, you'll find different orzottos, but for this one, I make a risotto with macaroni !
For the garnish here, we have diced fresh tomatoes, sun-dried tomatoes, and basil. I don't know if you agree with me, but I find that it's never easy to know what to put in a risotto, I'm not a fan of mushrooms, asparagus, and company so it's a bit of a headache anyway.
