Quick and Vegan Vegetable Patties

This is exactly the kind of super simple little patties I make when I have no idea what to eat and my leftover veggies make no sense 😅 Ready in 20 minutes, helps avoid wasting veggies, and they’re seriously tasty. Serve them with the sauce of your choice — here I used a gochujang mayo, which is a Korean fermented chili paste. But it could also be a chive cream sauce, a wafu dressing, or even just a slightly sweet soy sauce with sesame seeds!

I love using chickpea flour in all kinds of recipes, but you can totally swap it out for regular wheat flour if you prefer.

  • -carrots 2
  • -red cabbage 0.3
  • -green onions 1 (bunch)
  • -chickpea flour 100 (g)
  • -all-purpose flour 100 (g)
  • -water 415 (mL)
  • -salt
  • -sesame oil 1 (tbsp)
La sauce
  • -gochujang 1 (tbsp)
  • -soy cream 85 (mL)
  • -lemon juice 1 (tbsp)

  • Peel the carrots and grate them. Finely slice the red cabbage and green onions.
  • In a mixing bowl, whisk together the chickpea flour, wheat flour, and a pinch of salt. Gradually pour in the water while whisking. Add all the vegetables and mix well.
  • In a skillet, heat up some oil. When the pan is nice and hot, drop in a heaping spoonful of the vegetable mixture (I usually cook 3 at a time in my pan). Cook over high heat for about 3 minutes on one side, then flip and cook for another 2 minutes on the other. Repeat the process to make about 8 patties.
  • Make the sauce: mix all the ingredients together and serve with the patties!
