Last year for Veganuary, I showed on Instagram how you can grate tofu with a vegetable grater to use it as a meat substitute in fajitas, tacos, make shepherd's pie, stuffing for a pie or stuffed vegetables, etc. And this year, I'll show you in detail how I make my fajitas using this grated tofu! It's super simple and it creates a really different texture that you can compare to shredded chicken! A block of tofu generally corresponds to 454g (one pound). To make your fajita spice mix, combine paprika, chili powder, garlic powder, onion powder, cumin, ground coriander, pepper, salt, and a pinch of brown sugar!

  • -soy sauce 3 (tbsp)
  • -fajita seasoning 2 (tbsp)
  • -olive oil 1 (tbsp)
  • -Romaine lettuce 1
  • -wheat tortilla 9
  • -soy cream 200 (mL)
  • -lemon 1
  • -chopped flat-leaf parsley 4 (tbsp)
  • -sweet pepper

  • Peel and finely slice the onion.
  • Grate the tofu using a cheese grater or vegetable grater. Season it with soy sauce and spices.
  • In a skillet, heat the olive oil and sauté the onion. Add the grated tofu and cook for 8-10 minutes until nicely browned. Add the corn and remove from heat.
  • Pour the soy cream into a bowl and add a few drops of lemon juice. This will thicken the cream and give it a sour cream texture.
  • On the table, serve the shredded tofu nice and hot, warm wheat tortillas, sour cream, romaine lettuce, parsley, and mild peppers. You can add grated vegan cheese! Build your fajitas with all these ingredients!
