We've got what you need for a junk food night in front of Netflix! Homemade nuggets, that's gonna impress your friends, right?

Call it whatever you want, but today we've prepared some little chickpea balls or nuggets, breaded and fried! We used a bit of gluten flour to give it that "fake meat" seitan vibe, you know? And for the breading, we use either breadcrumbs, crushed corn flakes, or a mix of both.

  • -all-purpose flour 100 (g)

  • Drain and rinse the chickpeas well. Blend them to form a paste and work this paste with a rubber spatula in a mixing bowl. Add salt, spices, gluten flour, and 200 mL of water (you can use vegetable broth if you prefer). Adjust the amount of water to create a pliable dough with your hands. If you have it, you can also add liquid smoke to give a slightly smoky flavor.
  • Divide the dough into about thirty small pieces that you can shape by hand to resemble nuggets.
  • For the breading: prepare three shallow plates - one for the flour, one for plant-based milk, and one for breadcrumbs and/or crushed corn flakes that give a crispier result. One by one, coat your nuggets in flour, then dip them in the plant-based milk, and finally coat them in breadcrumbs.
  • When all the nuggets are breaded, heat the cooking oil in a pan (or turn on your deep fryer if you have one). Also preheat your oven to 350°F.
  • Fry the nuggets on each side in a pan (or in your deep fryer) until they are nicely golden. Next, arrange them all on an oven-safe tray and bake for 10 to 15 minutes. Serve with the sauce of your choice, ketchup, barbecue, vegan mayonnaise... I like to mix homemade tomato sauce with a bit of ketchup or sriracha, liquid smoke, and chili! You can also freeze your nuggets, before or after baking in the oven ;)
