Sun-dried Tomato Hummus

Don't like chickpeas? Well, neither do I, but I promise you're going to love this recipe! Yes, it's possible! To be honest, I've never been a fan of hummus... I mean, chickpeas are, in my opinion, so incredibly dull, so why bother trying to eat them? Well, because they're actually quite nutritious – they're called a "protein-rich legume" for a reason. And in "protein-rich legume," there's "protein." So, I'll leave it to you to guess why it's useful to eat them.

That being said, (yes, I looked up the spelling of that phrase on Google, don't laugh!) since chickpeas aren't that great in terms of taste, I have a recipe to liven them up! That's right, we're nice here at Éline's table!

  • -beefsteak tomato 1
  • -olive oil 80 (mL)
  • -salt
  • -pepper
  • -pine nuts
  • -cooked chickpeas 500 (g)
  • -dried tomatoes 150 (g)

  • Cut the tomato into 4 pieces, remove the pulp, and keep the flesh.
  • Drain the chickpeas. In your blender, mix the chickpeas, tomato flesh, sun-dried tomatoes, olive oil, salt, and pepper.
  • Transfer to a bowl and garnish with pine nuts.
  • Serve it with toasts or slices of rustic bread and enjoy!
