Do you know cramaillotte? It’s a kind of dandelion infusion jam, with a honey-like texture. Its floral taste and thick consistency really remind me of honey. I flavored it with dried lavender, and it’s wild how much it brings back memories of the lavender honey I used to love as a kid 😍. Spread on toast with vegan butter, stirred into coffee or tea, or used in cookies and pastries—it’s absolutely divine!
To get that perfect texture, I add a whole apple to the infusion. It releases natural pectin, which thickens the mixture once it cools.
Many people add lemon to their cramaillotte, but I personally don’t—feel free to choose what you prefer. And if you want to see how to prep the dandelions, I recommend The Greenquest’s YouTube video.
