The gwelladou, it's a thing from my neck of the woods, you know, a salted butter caramel with a spreadable texture, to slather on your morning toasts (or on your crepes too, because hey, we shouldn't put limits on ourselves in life). In fact, I also sometimes put it in my lattes...

Basically, it's sugar, butter, and cream, so it's easy to veganize. I've tried it with coconut oil because I love coconut caramel, so personally, that was my favorite version. You can also make it with margarine, but it will be a little less firm, or with deodorized coconut oil.

  • Pour the sugar into a pan and spread it evenly across the bottom to form a thin layer. Let the sugar melt over high heat, without using any utensils or water, to create a dry caramel. You can tilt the pan from time to time to ensure even cooking.
  • At the same time, gently heat the cream over low heat in a small saucepan.
  • Once all the sugar has turned into caramel, turn off the heat and pour in the warm cream. Add the coconut oil.
  • Mix well and rekindle the heat if necessary to ensure all the ingredients are thoroughly combined and melted together.
  • Pour into a jar and let cool for a few minutes. Add some fleur de sel according to your taste (be careful not to burn yourself when tasting, the caramel can stay hot for a long time).
  • You can store the gwelladou in the fridge for about ten days.
