So indeed, it's the same recipe as this one, we just added chocolate chips and pears, no big effort ;) I even went so far as to copy/paste some parts... really... well, Patate & Cornichon just isn't what it used to be, huh! We've always been kind of lazy, but this is taking it to new heights :D

But we've got loads of lovely compliments on this frangipane, so why change it? And maybe you wouldn't have thought of adding pear and chocolate on your own, it's sooooo original...

  • -almond powder 200 (g)
  • -cornstarch 40 (g)

  • Preheat the oven to 400°F.
  • For the frangipane: In a mixing bowl, combine the almond powder, sugar, and starch. Melt the coconut oil or margarine. Pour it over the powder mixture. Add the soy cream and whisk to combine. Finish by adding the chocolate chips.
  • Unroll a puff pastry and fill it with frangipane. Insert the charm anywhere you like. Peel the pear and slice it into thin strips to place on top of the frangipane. Cover with a second puff pastry and seal the edges well, folding them nicely inward.
  • You can create designs on top using the tip of a knife. Poke a hole in the center of the galette so that air can escape during baking, preventing a bubble from forming. With a brush dipped in soy milk, gently pat the top of the galette.
  • Bake for 45 minutes, keeping an eye on it from time to time; it should be nicely golden on top. It's ready!
