"Barista" Cashew and Oat Milk

The other day, I ran out of plant-based milk for my matcha, so I tried making a version that froths really well! And I can confirm, it’s suuuper frothy 😍😍 For my matcha, I make a cold milk froth using a milk frother. I haven’t tried it hot yet, but I’ll definitely make a hot version this fall 💕

I used oats and cashews for their neutral flavor and the added fat from the cashews! If you want a milk that froths well, you need to include some fat!

As always, I have to mention that it’s important to choose fair trade cashews. Working conditions, wages, and respect for biodiversity are very different between conventional and fair trade industries. I made a series of videos on this topic back in June if you’re interested!

Yes, it’s a bit more expensive, but cashews should be treated as a luxury item that you use occasionally. In this recipe, the cost comes to $1.21 for fair trade cashews from Umano, for example 🌱 The total cost of this organic oat and cashew milk is about $1.60 per liter (I use organic oats from Moulin Abénakis).

  • In your blender, add the oats, cashews, a pinch of salt, and 500 mL (2 cups) of very cold water.
  • Blend for a few seconds until you have a smooth milk. Then pour in the remaining 500 mL (2 cups) of very cold water and blend again.
  • Strain the milk through a cheesecloth or fine mesh sieve. Take your time to extract as much liquid as possible. You’ll be left with a small solid mass known as “okara,” which you can add to your morning porridge, cookies, veggie balls, banana bread, and more!​
  • Pour the milk into a bottle and store it in the fridge for up to 3 days.

NotesIt’s important to use very cold water and not to blend for too long, otherwise you might end up with a slimy milk due to the oat starch.
