I've been getting requests for more quick and easy meals, plus there's a big demand for gluten-free options! So this time, we’re making a bowl that’s kind of like a ceviche, shall we say? I was in the mood to cook with hearts of palm. I'm usually not a huge fan, but they pair so well with mango, red onion, and nori seaweed (those seaweed sheets used for sushi that you can find at most supermarkets).

The amount of hearts of palm corresponds to one can, and you can also throw in some veggie tuna like Gusta, which is absolutely delicious 😍

  • -canned palm hearts 400 (mL)
  • -red onion 0.25
  • -mango 1
  • -fresh chives 0.5 (bunch)
  • -nori sheets 1 (leaves)
  • -lime 1
  • -soy cream 65 (mL)
  • -sriracha sauce 2 (tbsp)
  • -basmati rice 140 (g)

  • Cook the rice in water for approximately 15 minutes.
  • Peel the mango and red onion. Dice them into small pieces. Finely chop the chives. Crush the nori sheet into small flakes.
  • In a bowl, place the hearts of palm and tear them into shreds. Add the mango, chives, onion, and seaweed. Mix well.
  • Add the zest and juice of the lime. Mix well and set aside.
  • Prepare the sauce: mix the mayo with the soy cream and the sriracha.
  • Drain the rice and serve it in bowls. Add the hearts of palm mixture and some sauce!
