I know it's simple, but it's one of the best salads I've ever eaten in my life! Kevin and I loved it, and we devoured it even though we're not big salad fans!
So I really recommend you try it ;) It's going to be perfect with barbecues this summer! This week we had it with savory coral lentil pancakes ;)
In a small dish, pour the dry wheat semolina. Pour over it 200 mL of boiling water, 1 spoonful of olive oil, and a pinch of salt. Mix well, then press the mixture to the bottom of the dish and let it sit for 5 minutes.
Peel the onion and grapefruit. Dice the bell pepper, onion, and grapefruit flesh into tiny cubes.
Using a fork, fluff the couscous to separate the grains from each other and to cool the couscous.
Mix it with the onion, bell pepper, and grapefruit. Add the arugula.
Prepare the dressing: mix all the ingredients together.
