I'm really learning to love asparagus this year! It started last year with the cajun barbecue asparagus from my ebook, and I'm genuinely starting to get the hang of them ๐Ÿ˜ I noticed that I truly enjoy their taste when they're grilled, as it brings out their umami flavor, which makes me want to pair them with teriyaki sauce sometime soon ๐Ÿ˜ฎ

I absolutely loved this salad with the sauce inspired by wafu dressing, the freshness of the orange and grated carrot...

  • -asparagus 1 (bunch)
  • -rice vermicelli 140 (g)
  • -carrots 280 (g)
  • -orange 2
  • -fresh spinach 60 (g)
  • -neutral oil 2 (tbsp)
Sesame Sauce
  • -toasted sesame oil 30 (mL)
  • -tamari 40 (mL)
  • -ginger powder 1 (pinch)
  • -maple syrup 30 (mL)

  • Cut off the ends of the asparagus. Remove the largest scales along the stem. Wash them.
  • In a frying pan, heat 2 tbsp of neutral oil. Cook the asparagus in it.
  • When they are golden, pour 1 cup of water (250 mL) and let it cook for a few minutes so the water evaporates. Season with salt.
  • Heat a pot of water. When it starts boiling, add the rice vermicelli. Let it cook for 3 minutes, then drain.
  • Peel and grate the carrots.
  • Remove the skin from the oranges and collect the segments of flesh.
  • Prepare the sesame sauce: mix all the ingredients together.
  • In a salad bowl, mix the spinach and vermicelli, add the carrots, oranges, and asparagus. Serve with sesame sauce.
