Alright, focaccia is my thing. First of all, I'm passionate about leavened dough and Italian cuisine, which is a perfect match. Besides, it's so delicious and infinitely versatile, it goes well with everything, and it's not complicated to make 😍 My husband is also a big fan of focaccia - we actually had it with all sorts of toppings on our wedding day! At my café, I cook it every morning too!

And yet, I hadn't shared my recipe here until now :)

As you'll see, it's very hydrated (105% water compared to the flour). This is what gives it that crispy crust and soft crumb. Immersing it in oil is also essential for the crispiness 🥰

  • -all-purpose flour 480 (g)
  • -water 500 (mL)
  • -dehydrated baker's yeast 2 (tsp)
  • -maple syrup 1 (tsp)
  • -salt 8 (g)
  • -olive oil 125 (mL)

  • In a large mixing bowl, pour the warm water. Add the maple syrup and the dehydrated yeast. Mix and let it sit for 10 minutes. Foam should form on top, a sign that the yeast is alive and well.
  • Add the flour and salt, and mix by hand to form a dough. Fold it onto itself a few times to give it strength (your hand should form a palm so as not to press your fingers into it at this stage, otherwise your fingers will stick to the dough).
  • In another mixing bowl, pour the oil and add the dough, immersing it in the oil without mixing. Let it rise for 2 hours.
  • Pour the focaccia dough onto a baking sheet. Add the toppings of your choice (flaky sea salt, rosemary, roasted garlic, cherry tomatoes...). And let it rise for another 1 hour.
  • Preheat the oven to 230°C (450°F).
  • Press your fingers into the dough to create bubbles, and then bake for 35 minutes.
