Alright, focaccia is my thing. First of all, I'm passionate about leavened dough and Italian cuisine, which is a perfect match. Besides, it's so delicious and infinitely versatile, it goes well with everything, and it's not complicated to make 😍 My husband is also a big fan of focaccia - we actually had it with all sorts of toppings on our wedding day! At my café, I cook it every morning too!

As you'll see, it's very hydrated (105% water compared to the flour). This is what gives it that crispy crust and soft crumb. Immersing it in oil is also essential for the crispiness 🥰
