Since I need to eat less white wheat flour at the moment due to inflammation during PMS—and I know many of you are interested in this too—I’m taking the opportunity to bombard you with recipes using ancient and alternative flours that are more nutritionally interesting 😍
Here’s a new example! These bagels are absolutely perfect—you’d never guess they’re made without regular wheat flour. I chose to combine white kamut flour, which mimics modern wheat beautifully, with whole spelt flour, known for its richness in fiber and minerals. Both are higher in protein and give these bagels their gorgeous golden color 🥹
As you know, I love kamut flour (khorasan)—I talk about it all the time 😅 But if you’re new here, kamut is an ancient wheat that’s very low in gluten, making it perfect for adapting my diet during this time of the month when I need to reduce gut inflammation.
