Alright, I know I said I'd stop sharing easy bread recipes to make at home πŸ˜…, but I craved a hearty morning bread that's packed with nutrients for our bodies, full of fiber, with flaxseed, quinoa, etc. So here it is 😍! Quinoa includes all 9 essential amino acids, making it one of the easiest foods to ensure we're not missing any! Not every day, no pressureβ€”but it's handy to know that. I love adding it to meatballs, veggie burgers, and in this case, bread πŸ˜πŸ’•

I'm not the type to count or calculate anything for my diet; every food has a place in a balanced and varied diet. Balance isn't achieved in one meal, but over several days 🌱. So don't stress about getting specific nutrients in every meal. Tomato sauce pasta has never killed anyone ❀️.

But as we often wonder if we're getting enough fiber, omega-3s, essential amino acids, proteins, etc., it's nice to know which foods have them and to have good recipes to enjoy them easily. This bread does just that: quinoa, flaxseed, oats, and whole wheat to give you plenty of good things to power your wonderful brain and those lovely legs of yours!

  • -flax seeds 75 (g)
  • -oat flakes 75 (g)
  • -whole wheat flour 350 (g)
  • -water 400 (mL)
  • -dehydrated baker's yeast 1 (tbsp)
  • -salt 10 (g)

  • Mix the lukewarm water and yeast, then let it rest for 10 minutes in a warm spot (like in the sun or in your turned-off oven with the light on). A foam will form on top.
  • In a blender, mix the raw quinoa, flax seeds, and oats to make a powder.
  • In a bowl (or the bowl of your mixer if you're using one), pour in this powder, the whole wheat flour, water with yeast, and salt. Knead the dough for 2 minutes until you get a smooth, lovely ball. Let it rest for 1 hour and 30 minutes under a damp cloth in a warm place.
  • Deflate the dough and place it on your work surface. Shape it into a rectangle and roll it up to form a log. You can coat the dough with oats for decoration. Place the log in a greased and floured loaf pan. Let it rest for 30 minutes under a damp cloth.
  • Bake the bread at 355Β°F (180Β°C) for 50 minutes. Let it cool, then remove from the pan! It's ready. It will keep for 3 days at room temperature. You can also freeze it in slices to have some on hand 😍
