It's true that at the moment, our articles are scarce during the summer. But we promise, when the new season starts, we'll embark on new adventures and take you with us :-)!

In the meantime, we've whipped up a quick little summer dish to accompany your salads: eggplant fritters! They're simply slices (you can use any vegetable, really) dipped in batter and corn flakes, then cooked in the oven ! 

We like to serve them with Thai sweet and sour chili sauce, which is super delicious! And with a salad on the side, it makes a perfect meal for summer.

  • -all-purpose flour 60 (g)
  • -salt
  • -water 100 (mL)
  • -cornflakes 50 (g)

  • Wash the eggplant. Cut it into 6 slices. Preheat the oven to 205°C (400°F).
  • Prepare the batter: mix the flour with water, whisking until a smooth, thick texture is achieved. Add salt. Crush the corn flakes in a deep plate.
  • Dip the eggplant slices in the batter, then in the corn flakes. Place them on a baking sheet lined with parchment paper and bake for 20 minutes.
  • When the coating is nicely golden, it's ready! And that's it, bon appétit!
