I created this cocktail for the evening before the wedding 🥰 Every day of the week, a cocktail was dedicated to one of our loved ones, depending on their tastes. My friend Melyssa is a lavender fan, it's public knowledge even 😅 so I loved creating this cocktail for her.

  • -lemon juice 1 (tbsp)
  • -lavender syrup 1 (tbsp)
  • -chickpea juice 20 (mL)
  • -sparkling water 20 (mL)
  • -gin 40 (mL)

  • Pour all the ingredients except the sparkling water into a shaker with ice cubes. Shake for a few seconds to create some foam.
  • Pour into a glass while filtering out the ice cubes. Add the sparkling water! Garnish with a few lavender flowers.

Notes*aquafaba: the liquid from a can of chickpeas *lavender syrup: In a saucepan, bring 250 mL of water and 250g of sugar to a boil. Let it boil for 5 minutes. Remove from heat, then add 2 tablespoons of lavender flowers. Let it infuse for 15 minutes. Strain.
