Orzo and White Kidney Beans One Pot Stew

It’s a bit similar to my other white bean stew from last month, but you asked for a version with milder flavors, more kid-friendly, and without kale! So here’s a stew just as creamy and tasty, but much gentler, with caramelized onions, pasta, white beans, and spinach. When I’m running low on groceries before restocking, I make this dish with frozen spinach. It’s such simple ingredients that we already have at home, super convenient!

  • -cooked white beans 260 (g)
  • -orzo 70 (g)
  • -Spinach (fresh or frozen) 200 (g)
  • -vegetable broth 500 (mL)
  • -nutritional yeast 10 (g) - optional
  • -soy cream 125 (mL)
  • -salt
  • -pepper
  • -olive oil 1 (tbsp)
  • -vegan grated cheese 40 (g)

  • Peel and thinly slice the onion.
  • In an oven-safe skillet, heat the oil and sweat the onion. Continue cooking for about 8-10 minutes until the onions are well caramelized, tender, and just starting to brown.
  • Next, add the white beans, orzo, spinach, vegetable broth, nutritional yeast, salt, and pepper. Let it simmer on high heat for about 10 minutes until the broth reduces and the pasta is fully cooked.
  • Pour in the cream and adjust the seasoning. Sprinkle with vegan shredded cheese and place the dish under the broiler for 5 minutes.
  • When it’s nicely browned, it’s ready! I serve it with a few slices of bread.
