For when you crave a quick, delicious, and refreshing meal, this recipe is perfect! Mini pizzas made on pita bread and an amazing peach and arugula salad :)

For the pizzas
  • -Paris mushrooms 90 (g)
  • -tomatoes 1
  • -pita breads 3
  • -tomato sauce 125 (mL)
  • -soy cream 60 (mL)
  • -gomasio 2 (tbsp)
For the salad
  • -arugula 2 (handful)
  • -walnuts 20 (g)
  • -peach 2
For the dressing
  • -olive oil 2 (tbsp)
  • -maple syrup 1 (tbsp)
  • -balsamic vinegar 1 (tbsp)
  • -salt

  • Preheat the oven to 180°C (355°F).
  • Thinly slice the mushrooms and cut the tomato into rounds.
  • On the pita breads, spread the tomato sauce. Add mushrooms and tomato slices on each. Drizzle with a bit of soy cream. Season with salt and pepper. Sprinkle with gomasio.
  • Bake the pizzas for 15 minutes.
  • In the meantime, cut the peaches into quarters (with or without the skin, according to your taste). Mix them with the walnuts, arugula, and dressing.
  • Serve the pizzas with the salad on the side!
