For when you crave a quick, delicious, and refreshing meal, this recipe is perfect! Mini pizzas made on pita bread and an amazing peach and arugula salad :)
Thinly slice the mushrooms and cut the tomato into rounds.
On the pita breads, spread the tomato sauce. Add mushrooms and tomato slices on each. Drizzle with a bit of soy cream. Season with salt and pepper. Sprinkle with gomasio.
Bake the pizzas for 15 minutes.
In the meantime, cut the peaches into quarters (with or without the skin, according to your taste). Mix them with the walnuts, arugula, and dressing.
