I’d had this idea for stuffed rolls with homemade melty vegan cheese, made with pizza dough, for a long time! But to properly stuff the pizza dough, I thought I’d freeze the cheese into cubes first. At the same time, I felt like that was too much effort and waiting time for just a little appetizer. So, I tried using the melty cheese directly in the dough instead. In the end, its stretchy texture kept it from leaking, and it was actually pretty easy to make.
That said, make sure to seal the dough better than I did, okay? I had a little bit of cheese escape, haha!
