I love these little vegan cheese rolls for appetizers, happy hours, or even as a snack! I always use my cashew spread recipe and add flavors of my choice—this time, sun-dried tomatoes and chives. It’s super simple and absolutely delicious 😍. Perfect to bring to a friend’s place or a potluck, too!

  • -deodorized coconut oil 40 (g)
  • -lemon juice 1 (tbsp)
  • -salt
  • -pepper
  • -dried tomatoes 8
  • -fresh chives 0.3 (bunch)

  • Soak the cashews in a glass of water for 45 minutes.
  • Drain them and blend with the melted oil, lemon juice (or vinegar), and salt until you get a thick, creamy texture.
  • Pour into a bowl and add the minced sun-dried tomatoes, chopped chives, and pepper. Mix well and refrigerate for one hour (or up to 3 days if you want to prepare it in advance).
  • Spread the sun-dried tomato cheese on your wraps and roll them up to form logs. Slice the logs into small bites!
