Tazta-what ??? Tzatziki! You know, that Greek yogurt with herbs and cucumber! Spread on wraps with some raw veggies, and voila: a super quick appetizer! Of course, the Éline's Table version is plant-based: so we'll use soy yogurt.

You can use the raw veggies of your choice. Here I've added cherry tomatoes, cucumber, and avocado, but why not try some lettuce, radishes, beets, carrots, corn on the cob, or cabbage! It's really adaptable to what you have in your fridge in the end...

  • Peel the cucumber. Take a quarter of it and cut into small cubes.
  • Mix the small dice with the soy yogurt, salt, and pepper.
  • Finely chop the chives and mint, and add the herbs to the yogurt as well to make the tzatziki.
  • Cut the rest of the cucumber into thin slices.
  • Prepare the wraps: spread tzatziki on each wheat tortilla, place the cucumber slices, and roll up the wraps.
  • Then cut them into sections and skewer them with toothpicks.
  • Treat yourself ;) !
