So with all of this, you'll have everything you need to make a fantastic Lebanese mezze! You've got hummus over here, some Lebanese moussaka over there, baba ganoush, falafels, and now our fatayers, little lemony spinach turnovers :D And we all agree that Lebanese food is pretty much the best when you're vegan! 

These little fatayers are essentially a pizza dough stuffed with spinach cooked with onions and flavored with lemon. So, to make this recipe much faaaster, you can also buy your pizza dough at the store, we'll forgive you ;) But for those highly motivated days, we'll explain everything for you to make it with your own little hands!

  • -all-purpose flour 150 (g)
  • -fresh yeast 7 (g)
  • -salt 5 (g)
  • -sugar 1 (pinch)
  • -olive oil 20 (mL)
  • -fresh spinach 200 (g)
  • -onion 1
  • -olive oil 2 (tbsp)
  • -lemon 0.5

  • Prepare the dough: dissolve the baker's yeast in 70 mL of water. Mix the flour, salt, and pinch of sugar. Then pour in the oil and water with the yeast. Form a dough ball (add a little water if necessary), and knead it by hand or with a dough hook in your mixer for a few minutes. Cover the bowl with a damp cloth and let it rise for an hour.
  • Prepare the stuffing: Peel the onion and chop it finely. Heat the oil in a pan and sweat the onion in it. Add the spinach and let it wilt. Season with salt and pepper and add lemon juice, according to your taste. Allow the stuffing to cool completely.
  • Preheat the oven to 350°F.
  • Punch down and roll out the dough, it should be quite thin (2 mm thick). Cut out circles using an upside-down bowl. Place the filling in the center of the dough circles, then close the fatayers to form triangles.
  • Place the fatayers on a baking sheet and bake for 25 to 30 minutes.
