We know you love impressing your squad with super easy recipes. So, for the appetizer, we've cooked up something perfect for the lazy foodie in you: puff pastries. Yeah, you just buy the dough from the store and stuff it with a few bits and pieces you find at the bottom of your fridge, right? ;)

For this one, we've got caramelized onions and chive-flavored vegan ricotta as the filling, just to give you some inspiration :) Otherwise, that old tapenade you brought back from your summer vacation and a piece of sun-dried tomato that never seems to go moldy will do the trick too.

  • -vegan puff pastry 1
  • -onion 3
  • -firm tofu 150 (g)
  • -soy cream 80 (mL)
  • -chives 0.25 (bunch)
  • -maple syrup 1 (tbsp)
  • -soy milk 2 (tbsp)
  • -olive oil
  • -salt
  • -pepper

  • Peel and thinly slice the onions. Heat a drizzle of olive oil in a pan and fry the onions until softened. When they are soft, add the maple syrup and continue cooking until they are well caramelized. Season to taste. Allow to cool.
  • Blend the tofu with the soy cream to obtain a crumbly texture similar to ricotta. Season to taste. Finely chop the chives and add them.
  • Preheat the oven to 350°F.
  • Cut circles in your puff pastry and top them with a bit of onion and a bit of ricotta. Fold over into half-moons and seal the edges. Brush with a little soy milk and bake for 20 minutes.
