I love making little fritters like this for appetizers! A few years ago, I made a similar version with “mini asparagus pancakes.” And with corn, it’s so good—sweet and slightly charred 😍 Plus, it only takes a few minutes to make!
In a mixing bowl, whisk the flour while gradually pouring in the water to get a smooth batter. Add salt and pepper, then stir in the corn, chopped spinach, and oregano leaves. Mix everything together.
Heat the oil in a pan. Drop small spoonfuls of the corn batter into the pan to form your fritters, and cook them for a few minutes on each side until golden brown. Repeat until all the batter is used up.
Serve the fritters warm, just as they are, or with a little chive cream, for example.
