These are little tacos with sweet potato, soy protein like ground beef, and a lime cream! You can add whatever you want to them, like tomato, avocado, red onion, guacamole, cilantro, vegan cheese, tomato salsa...
Place the whole sweet potatoes in the oven at 350°F for an hour to ensure they are soft in the middle.
Remove the skin and mash the flesh of the sweet potatoes. Add the soy cream, salt, and pepper, and mix.
Heat 500 mL of water with the miso and soy sauce and mix well. Pour this mixture over the soy protein chunks to rehydrate them.
Thinly slice the onion and sweat it in olive oil in a saucepan. Add the Cajun spices, chili, sugar, and Herbes de Provence.
Add the rehydrated textured soy protein. Let it cook until all the water has evaporated.
Prepare the lime cream: mix the soy cream with the juice of the lime and some salt.
Prepare, according to what you like, slices of tomato, avocado, red onion, guacamole, cilantro...
