Savoury crepes with apples and onions

This is at least my fifth buckwheat pancake recipe with a different filling πŸ˜… But it's not my fault, I was raised among the Bretons 😭 After the leek fondue, mushrooms, sausage pancake, and many other comforting crepes... here is a lighter version! Melted apples and onions, very creamy, with arugula and walnuts.

  • -yellow onion 2
  • -apples 3
  • -buckwheat flour 300 (g)
  • -arugula 2 (handful)
  • -walnuts 20 (g)
  • -soy cream 125 (mL)
  • -neutral oil 2 (tbsp)
  • -balsamic vinegar 0.5 (tbsp)

  • Peel the onions and apples. Thinly slice them.
  • In a saucepan, heat 1 tbsp of oil. Sweat the onions in it for 3-4 minutes. Add the apples and let cook over medium heat for about 15 minutes with a lid.
  • Prepare the buckwheat crepes: whisk together the flour, a teaspoon of salt, and 2 1/2 cups of water (625 mL) in a bowl. Lightly oil a pan and heat it over high heat. Pour a ladleful of batter to cover the pan with a thin layer and let it cook for 1 minute on each side! Repeat the process to make 6 crepes.
  • In a bowl, mix the arugula, walnuts, 1 tbsp of oil, 1/2 tbsp of vinegar, and a pinch of salt.
  • In the saucepan, once the apples are well cooked, pour in the soy cream and season with salt and pepper.
  • Fill each crepe with cooked apples and onions, and arugula.
