Vegan Banana-Raspberry Ice Cream

Today, we come back with a little homemade ice cream, because we thought it would be better to post it while it's still summer! This vegan ice cream technique is well-known: basically, you put all your fruits in the freezer, the next day you blend, and presto, you have ice cream! We didn't work too hard on this one... Well, we do add a bit of soy cream for creaminess, but that's really it!

The texture is excellent; it's creamy but firm enough to make pretty scoops with an ice cream spoon. We devoured it while watching Orange is the New Black the other day, and it was quite delicious ;-)!

On that not-so-cultural note (well, not really, but still...), here's the recipe!

PS: for the bananas, when I have overripe ones that I don't want to eat anymore, I freeze them in small pieces in a container, and when the container is full I make ice cream with them! That was today's tip from Éline ;-) .

  • The day before: peel the bananas and cut them into small pieces, then place them in a freezer-safe container.
  • On the day itself (about 2 hours before eating): In your blender, put the banana pieces and raspberries (still frozen) as well as the soy cream. Blend to obtain a smooth consistency. Depending on the blender, it may take more or less time, but the fruits should not thaw. What we recommend is blending for 5 seconds, stirring with a spatula, blending for 5 seconds, stirring, blending... until you have the right texture.
  • Set aside your ice cream in a bowl and place it in the freezer for about 2 hours to achieve the perfect texture. If you only have one hour, that'll do too, eh ;) . And there you have it, it's ready! You can also try this recipe with other fruits and share the photos with us on social media :D !
