It's my vacation week and I'm taking the opportunity to share with you a super easy variation of my pancakes: banana and speculoos! It's one of my favorite fillings for our pancake nights or brunches 😍😍

The Lotus speculoos spread is accidentally vegan, so why not take advantage of it πŸ˜‰

For the crepe batter
  • -all-purpose flour 180 (g)
  • -soy milk 350 (mL)
  • -sugar 2 (tbsp)
  • -salt 1 (pinch)
For the filling
  • -speculoos 4
  • -banana 1
  • -speculoos spread 4 (tbsp)

  • Prepare the crepe batter: using a whisk, mix the flour with the soy milk, sugar, salt, and 50 mL of water.
  • Heat a lightly oiled pan over high heat. Cook a ladle of batter to make the first crepe. Repeat the process to have a total of 4 crepes.
  • In the microwave, gently warm the speculoos spread so that it becomes pourable.
  • Slice the banana into rounds.
  • Garnish the crepes with spreadable chocolate, banana slices, and crumbled speculoos cookies.
