The creation of this tart dates back a few years, thanks to my Bourdaloue tart and my dear colleague Clem. In my café, we often made Bourdaloue tart, but it's a dessert that takes longer to prepare with poaching the pears.
One day (it feels like I'm telling a fairytale, I love it 😅), my colleague had the idea to replace the poached pears with frozen blueberries to vary our desserts without losing time! This resulted in this blueberry almond tart, which became one of our best-selling desserts for two years ✨🥰
It's also one of my dad's favorite desserts, so here it is for his birthday at last!
