Vegan Broccoli Pasta Gratin

The perfect little idea for a quick meal is to make a super creamy pasta gratin. Don't thank us, that's just how we are at Éline's Table ;-)

So basically, you take a broccoli, cook it, add some soy cream and layer it up with pasta! Easy peasy :)

  • -pepper
  • -salt
  • -olive oil
  • -breadcrumbs 2 (tbsp)
  • -fresh chives
  • -soy cream 100 (mL)
  • -macaroni 300 (g)
  • -broccoli 1

  • Cut the small broccoli florets into small pieces and cook in a pot of salted water until tender. Drain and cool in ice water.
  • Cook the macaroni in a large pot of boiling salted water with a drop of olive oil.
  • In a mixing bowl, pour the vegetable cream and add the broccoli and chopped chives. Crush slightly with a fork and season well with salt and pepper.
  • Preheat your oven to 392°F.
  • In your ramekins or gratin dish, spread a thin layer of the broccoli mixture, then a layer of pasta, then more broccoli, another layer of pasta, and finally top with the remaining broccoli. Sprinkle with gomasio and breadcrumbs for a crispy gratin topping.
  • Bake for 15 minutes! Enjoy it with a side salad ;)
