Lemon and Vegan Feta Pasta

I confess everything, I stole this idea from my teammate, Maxime, who works with me in the kitchen at Nutmeg. The other day, he and our other colleague, Simon (who worships lemon), decided to have lemon pasta for their lunch. They offered me some, and like a 5-year-old child, I made a face because I didn't know it 😅But I tasted it, and I loved it 😛

So, I stole the idea 🤫I decided to add walnuts, nutritional yeast, and express tofu feta to finish off this dish! And I really want to eat this all summer, it's so good!

  • -spaghetti 250 (g)
  • -shallots 3
  • -lemon 1
  • -olive oil 2 (tbsp)
  • -soy milk 250 (mL)
  • -nutritional yeast 3 (tbsp)
  • -salt
  • -pepper
  • -walnuts 40 (g)

  • -firm tofu 100 (g)
  • -lemon 1
  • -olive oil 3 (tbsp)
  • -salt 0.5 (tsp)

  • Bring a large pot of salted water to a boil for the pasta.
  • Peel and finely chop the shallots. Grate the zest of the lemon and squeeze it to collect the juice.
  • In a saucepan, heat the olive oil and sweat the shallots in it. When they start to color, deglaze with the lemon juice and 125 mL of water. Also add the lemon zest. Let cook for about 8 minutes.
  • Put the pasta on to cook.
  • Prepare the feta: crumble the tofu into small pieces and mix it with the lemon juice, oil, and salt. Let it marinate.
  • In your saucepan with the shallots, pour in the soy milk and 125 mL of pasta cooking water! Add the nutritional yeast and let it cook for another 5 minutes. Season with salt and pepper.
  • Drain the pasta and mix it with the shallot and lemon sauce, then add the walnuts.
  • Serve with some tofu feta and a few fresh basil leaves!

Notesthis quick way of making tofu feta has less flavor than when you let it all marinate for one or several days in the fridge. So, you can also prepare it in advance, it'll be even better :)
