Quick Udon Noodles with Peanut and Sriracha

It’s the first of September, and whether we like it or not, it has a bit of a back-to-school feel, doesn’t it? I didn’t take any vacation this summer, so it’s not really a back-to-school for me, but it still inspires me to create recipes for quick lunches for my dear remote workers, for those busy family dinners, for take-away lunches, and even for those budget-conscious students... So here’s a quick udon noodles recipe! The idea is to simply assemble everything while the noodles cook; you mix your sauce cold directly in your bowl.

To add some fruits and veggies, I recommend serving this with some cherry tomatoes, arugula, corn, avocado, kimchi, grated carrots... whatever you like!

  • -udon noodles 200 (g)
  • -peanut butter 1 (tbsp)
  • -soy sauce 2 (tbsp)
  • -sriracha sauce 1 (tsp)
  • -lime 0.5
  • -maple syrup 1 (tsp)
  • -green onions 1
  • -sesame 1 (tsp)
  • -toasted sesame oil 0.5 (tsp)

  • Put a pot of water on to boil with a pinch of coarse salt.
  • In the meantime, prepare the sauce directly in the bowl where you'll be eating: mix the peanut butter, soy sauce, sesame oil, sriracha, juice of half a lemon, and maple syrup.
  • Add the sesame seeds and sliced green onion.
  • Cook the noodles in water for 2 minutes.
  • Reserve a quarter cup (60 mL) of cooking water and add it to your bowl, mixing it with the sauce.
  • Drain the noodles and mix them with the sauce in your bowl! It's ready, serve with some raw veggies or kimchi if you like.
