If you love pasta and booze, I’ve combined your two passions… Okay, more seriously—no, you can’t get tipsy off vodka pasta 😅 The alcohol evaporates, and it’s actually a super classic, traditional recipe—I didn’t invent anything here!
Vodka pasta is basically a creamy tomato (rosé) sauce with a splash of vodka, which balances the flavors and gives the sauce amazing depth. I really recommend trying it 😍
Plus, it’s an easy recipe made with pantry staples—perfect for lazy weeknights!
Peel and finely chop the shallots. Bring a pot of salted water to a boil for the pasta.
In a skillet, heat the oil and sauté the shallots with the chili flakes.
Crumble the sausages into the skillet and cook over high heat until nicely browned.
Meanwhile, once the water is boiling, add the pasta and cook according to the package instructions.
Add the tomato paste and stir well. Then pour in the vodka. Let it simmer for a few moments to allow the alcohol to evaporate, then add 2/3 cup (165 mL) of pasta cooking water to the skillet.
Add the soy cream, oregano, some pepper, and vegan parmesan.
Drain the pasta and add it to the skillet. Finish with fresh basil and serve!
NotesIf you skip the sausages and/or the parmesan, you’ll probably need to add some salt!
