Did you think about carving out your Halloween pumpkin? No? You say it's pointless? Well, you're not entirely wrong... but if you had done it, you'd have some pumpkin flesh in your fridge, and you could make this awesome cannelloni recipe... bam!

Plus, we thought about the little lazybones that you are - it's quick! The cooking time is long, but you can do your nails while waiting (or bite them, to each their own). For the filling, you can add whatever you like, we just loooove doing this with veggie ground meat, but it can also be legumes, portobello mushrooms... even textured soy protein if you're into that, it'll be perfect for cannelloni ;) With some onions and a can of crushed tomatoes, voilà, you got yourself a filling! Drizzle that with your pumpkin cream, a bit of breadcrumbs for the topping, and that's it.

  • -soy cream 200 (g)
  • -crushed tomatoes 300 (g)
  • -vegan ground beef 200 (g)
  • -onion 2
  • -olive oil
  • -salt

  • -breadcrumbs 1 (tbsp)

  • Prepare the pumpkin cream: Cut the pumpkin into small cubes and cook in water with coarse salt for about fifteen minutes. Drain and mash into a purée. Add the soy cream and season well with salt and pepper. Set aside.
  • Prepare the filling: Peel and finely chop the onions. Sweat them in a pan with a little olive oil. Add the vegetarian mince or whatever you like... you can also use fresh vegetables and herbs according to the season. Pour in the crushed tomatoes. Let it cook and reduce for about 10 minutes. Season to taste.
  • Preheat the oven to 200°C (392°F).
  • Fill the cannelloni with the stuffing and arrange them in a lightly oiled gratin dish. Pour the pumpkin cream over the top and then sprinkle with breadcrumbs. Bake the dish for about 50 minutes.
