So, we know, this is our third cookie recipe on the blog... but that's because we're seeking perfection ;) And this one is the best. Super simple, with ingredients you already have in your cupboard, you know the drill! So, humbly, here are our best cookies: soft on the inside and all crispy on the outside :D 

Oh, and you can keep them for like 4 days in a metal tin, they'll still be tasty. 

Obviously, you can put whatever you want in them, it could be macadamia nuts, coconut shavings, dried fruits if you're into that (we won't judge you ...), in short, do whatever you want with them!

  • -coconut oil 100 (g)
  • -sugar 200 (g)
  • -applesauce 55 (mL)
  • -soy milk 50 (mL)
  • -all-purpose flour 350 (g)
  • -baking soda 1 (tsp)
  • -salt 1 (tsp)
  • -chocolate chips 100 (g)
  • -pecan nuts 40 (g)

  • Preheat the oven to 375°F.
  • Melt the coconut oil. Mix it with the sugar, then add the soy milk and apple sauce.
  • Add the flour, baking soda and salt. Mix everything by hand to fully incorporate all the flour and create a dough that is neither sticky nor crumbly.
  • Roughly chop the pecan nuts and incorporate them with the chocolate chips into the dough.
  • Shape 12 small dough balls (about 65g each if you want to weigh them, or else 10 large cookies of 75g if you're feeling indulgent). Place them on a baking sheet lined with parchment paper and slightly flatten them.
  • Bake for 10 to 12 minutes.
