I was sure I had already released a clafoutis recipe a few years ago, but I think I just dreamt it... tell me if it rings a bell ahah 😅 (a girl loses her mind, after 9 years, I can't remember everything, you know)

Anyway, here's another one. I based it on grandmother’s recipes: half milk, half cream, but all plant-based, quite simply 💕 The clafoutis is a bit like pancake batter and eggs surprisingly don't need to be replaced! This recipe is low in sugar; feel free to adjust the amount of sugar to your taste and according to the natural sugar present in the fruits you're going to use (I suggest not exceeding 100g, though). And of cooourse, you can use the fruits of your choice: cherries, apricots, mirabelles when the season comes round! Here I used frozen blueberries and lemon!

  • -rum 1 (tbsp)
  • -blueberries 315 (g)
  • -lemon 1
  • -all-purpose flour 100 (g)
  • -sugar 50 (g)
  • -soy cream 200 (mL)
  • -icing sugar 1 (tbsp)

  • Preheat the oven to 185°C (360°F). In a bowl, fully zest the lemon and mix it with the sugar, rubbing well between your fingers.
  • Add the flour and whisk together, this will prevent lumps when we pour in the milk!
  • Make a well in the center and pour in the plant-based milk (I use soy milk but you can choose whatever you fancy). Whisk from the center, gradually moving towards the edges to incorporate the flour.
  • Add the cream and rum and whisk again. You can also put in vanilla or bitter almond extract.
  • Oil a gratin dish or a pie tin, and dust it with a small spoonful of flour. Spread the frozen or fresh blueberries all over. Pour the clafoutis batter over it then bake for an hour.
  • Once the clafoutis is cooked, place it in the fridge for two hours before you can cut it into servings and EAT it up!
