Quick Coconut and Chocolate Tart from my mom

This recipe is actually my mom's, but I've modified it a bit, veganized it, and made it a little less sweet because I'm that annoying person who finds all desserts too sweet, haha...

Usually, when I think about the next recipes on the blog, especially for cakes, I always want it to be a little complicated or have a special technique, otherwise I feel like it's not contributing anything. But in reality, sometimes we're also looking for super-simple desserts to whip up quickly, so here's an example ;)

for the base
  • -cookie (dry cookies, chocolate, speculoos...) 400 (g)
  • -plant-based margarine 120 (g)
  • -all-purpose flour 40 (g)
for the coconut layer
  • -sugar 90 (g)
  • -cornstarch 40 (g)
  • -plant-based margarine 80 (g)
  • -grated coconut 200 (g)
for the chocolate layer

  • Preheat the oven to 180°C (356°F).
  • Crush the biscuits and mix with the margarine and flour. Spread this mixture onto the base of your pie dish and bake for 10 minutes.
  • Mix the shredded coconut, sugar, starch, margarine, and plant-based milk. Spread this mixture over the biscuit. Place back in the oven for 20 minutes.
  • Melt the chocolate with the plant-based cream and spread it on the tart!
  • Chill in the fridge for an hour, or more. And it's ready :)
